Looking at the sort of terrain you are talking about I'm not convinced that a touring bike would be the way to go. They are intended for road use with little clearance between tyre and mudguard. However I would second the opinion that cheap initially means expensive in the long run. A lot will depend on your budget and where you intend to go. If you are looking to spend less than, say, £300 then I'd look for a second-hand bike. If your intended journey is 70% off road then go for a mountain bike. If it is half and half then look at hybrids and at touring bikes if it is mainly road or prepared trails.
