Hi Cyclepop,
You can certainly get 8 speed hub gears these days (Shimano and Sturmey Archer do them for a start). They do have the advantage of longer life than a derailleur system as the gears are enclosed. The chain will also last much longer as it is not being constantly pushed sideways (when changing gear). The usually quoted drawback is that they weigh more than a derailleur system. However, if you take into account the double (or triple) chainset, front gear mech, rear gear mech, longer chain and multiple rear sprockets of the typical derailleur system then the weight disadvantage becomes substantially less. That said all the weight is now on the back wheel whereas with derailleurs it is spread about the bike. Cost wise, the derailleur system will be much cheaper as an 8 speed hub alone is about £170.
If you choose your gears carefully you can have a straight through derailleur system whereby you run through the rear sprockets on the small chainring, then switch to the larger ring and the large sprocket and work back up the gears. However, to do this you would be looking at the shop altering the basic spec of the bike, which is additional expense. A lot will depend on your budget. For around £300-£400 you would get either a hybrid with 21 gears, (probably heavier than you are wanting) or possibly a flat bar road bike with 16 gears, though the gearing will almost certainly be too high.
