I can well understand your preference for steel frames, at least you get a certain amount of resilience in them. Unfortunately in todays steel framed market you either get heavy cheap bikes or expensive ones made from Reynolds tubing. All the mid range/priced bikes have aluminium alloy frames and will generally have at least seven cogs on the back wheel with three rings on the chainset giving 21 gears. Most of these bikes will have the Shimano E-Z fire twin lever gear levers as well.
If price is of secondary importance then I suggest you contact one of the country's framebuilders who will make a steel frame to suit you personally and fit the equipment you want on it. But expect to spend £1500 or so to and wait 5 months for it to be built.
Dave Yates, Bob Jackson's, Mercian or Thorne, spring to mind as likely builders. (All have web sites).
Of the ready for use bikes the Dawes Nomad is a Reynolds steel framed bike with an eleven speed hub gear, flat bars and either 26" or 700c wheels (to choice) costs £1499.99 and should be available ex stock, but I'm not familiar with any other brands.
