I would agree that the Giant Iguana is hardly the bike to train on but if you are having knee problems then I would suggest you leave off the 20mph work until until it improves as cycling can be hard on the knees. By all means do a bit but keep the gears low and make sure the pedal cleats have plenty of lateral movement to allow your knee to work naturally.
As far as what bike is concerned, I'm afraid that we in the UK are not going to be much help. It is quite probable that the models available in Tokyo are different to those in the UK and the prices certainly will be.
Go into a few cycle shops and see what is available. As we say on here, most of the different brands you see in the shops are made in a small handfull of factories in the Far East and they predominantly use Shimano equipment so look around and see what takes your fancy.
