Bikes are quite awkward items to have to transport (apart from riding from A to B that is) so it may be as well to buy in Jersey itself. That would also have the advantage of you knowing that the bike you buy will have back-up should anything go wrong within the warranty period. Even if there is a dealer on the island who stocks the make of bike you brought with you, your warranty is with the shop where you bought it.
Hybrids would appear to be the way to go, but again if you buy in Jersey then you would get advice from people who know the terrain and can give guidance on where to ride etc.
